Okay, so remember in my bio when I said I’m unapologetically excessive? Keep that in mind when I tell you that I own approximately 16 mini waffle makers that make all different shaped waffles…yep…not joking! Sky loves my homemade waffles, and as you know, she loves helping me cook and bake, so I decided to buy a couple of the novelty mini waffle makers I’ve seen online so that we could have some fun making waffles together. Well, we had soooo much fun that I decided I should buy every…single…shape I could find, so we could keep our freezer stocked with adorable waffles year round! Now, our waffles are pretty much a staple in our house, because the whole family loves them, and something that drums up that much love NEEDS to be shared with the world! So I am about to share with you how we make our Mini Homemade Waffles.

To get started, gather your ingredients. You are going to need flour, baking powder, sugar, Himalayan pink salt, cinnamon, eggs, milk, vegetable oil, and vanilla extract, as well as your desired toppings such as, butter, syrup, fresh fruit, whipped cream, ice cream, powdered sugar, etc.
Begin by preheating the waffle irons you intend to use. Then, in a large bowl, whisk together your flour, sugar, Himalayan pink salt, baking powder, and cinnamon (if using) until well incorporated; set aside.
Next, add your egg whites to a medium bowl (reserving your egg yolks in a separate, small, prep bowl). With an electric hand mixer on high, beat your egg whites until stiff peaks form; set aside.

In a medium bowl, mix together your milk, egg yolks, vegetable oil, and vanilla extract. Gradually pour your wet ingredients into your dry ingredients and beat until fully combined. Gently fold in your whipped egg whites until completely incorporated.
Carefully spoon 2-3 Tablespoons of your batter onto your preheated mini waffle irons and cook according to the manufacturer’s directions. Serve hot with your desired toppings. Store in a plastic bag or airtight container in your refrigerator for 5 days or in your freezer for up to 3 months.
To re-heat these Mini Homemade Waffles straight out of the refrigerator, I recommend just popping them into your toaster for a couple of minutes until you achieve your desired crisp. For waffles taken out of the freezer, I generally like to defrost them in the microwave for 30-45 seconds and then pop them into the toaster for a couple of minutes.

Ingredients
WAFFLES
2 ¼ cups flour
1 Tablespoon baking powder
3 Tablespoons sugar
