I don’t know about you, but there are certain recipes I make that just scream “Summer” to me, and my Broccoli Salad is one of them which is why I have to include it on the menu for Sky’s 3rd Birthday party. If you have never tasted Broccoli Salad before, you might start reading through the ingredients and watch the video below and say to yourself, “Eww…no way!” Just trust me on this one though…it’s delicious! The dressing for this is exactly the same one I use for my coleslaw that was featured with my Pulled Pork recipe. The only difference is the simple addition of some finely diced onions (stay with me here…I promise you the flavors marry so well in this salad).
For this recipe, you are going to need fresh broccoli, an onion, mayonnaise, sugar, white vinegar and real bacon bits. You also may want to top your salad with some shredded mozzarella or cheddar cheese, but cheese is not necessary.

To make this recipe, begin by cutting your broccoli into bite-sized florets, place it into a large bowl and set it aside. Dice your onion into fine pieces and set it aside as well while you make the dressing.
In a medium bowl, prepare the dressing by whisking together the mayonnaise, sugar and vinegar. Add in the diced onion and mix to incorporate it completely. Pour the dressing over the broccoli florets and stir to coat thoroughly. While stirring, sprinkle the bacon bits over the broccoli. Top with cheese if desired. Keep refrigerated.
You can whip this up in about 15 minutes and get it into the refrigerator. It’s not only a delicious salad to serve at your parties, it also makes a great side for a barbecue or a lunch to pack for work. Try it out…you won’t be disappointed.

Ingredients
2 heads fresh broccoli
1 medium onion
1 cup mayonnaise
½ cup white sugar
2 Tablespoons white vinegar
1 (4.3 ounce) package real bacon bits
Optional: Mozzarella or cheddar cheese, shredded
METHOD
- Cut broccoli into bite-sized florets and place into a large bowl; set aside. Dice onion into fine pieces; set aside.
