How many of you out there are living the hectic life that entails getting up in the morning, getting your kids ready for daycare or school (or both), while simultaneously getting yourself prepared for the day…making sure the kids have eaten a healthy breakfast, have their lunches, school bags, gym bags, etc., and heading out the door on time? And after taking care of everyone else and making sure all of your children have everything that they need, and are well nourished, just how many of you have thought to take care of yourself? Have you eaten breakfast or have you just quickly grabbed your coffee and some processed breakfast item to eat on the way out the door? Just the thought of this scenario drums up anxiety inside of me, because we have allll been there! I’m sure we all have very high hopes of waking up early, having everyone do everything they need to do in the morning without having to to be prompted by you to do so, eating a nutritious, energizing breakfast, and leisurely walking out the door to start our days, but the reality of it is…THAT MAY LITERALLY NEVER HAPPEN! So why not take some control over your morning by making some of my Meal Prep Egg Scrambles on the weekend that you can simply throw in the refrigerator or freezer to have waiting for you to grab as you head out the door to work?
Sure, you could buy something similar to these at your grocery store and eliminate the time and effort of preparing them yourself, but you will not only be getting a lot less ingredients in those for a lot more money, you will also be getting a ton of added preservatives! Since making the transition to a Keto lifestyle, I have learned the importance of fueling my body with the right stuff. If you ever want to know what I’m talking about, remove sugar from your diet altogether while limiting your carbohydrate consumption for just ONE WEEK and pay attention to the way your body feels, how clear your mind is, the energy and endurance you have throughout the ENTIRETY of your day, etc. After doing that, the IMMEDIATE result of adding any sugar back into your diet is mind blowing! The same goes for the addition of processed foods…brain fog and fatigue consume you, making it hard to think and focus. Think about that for a second, because that is exactly what you are experiencing when you start your day with sugary/carb-filled/processed foods like cereal, Pop Tarts, pastries, donuts, bagels, etc., yet a large percentage of us out there still grab for these things, because they are a convenient way to fill our bellies. That means that the vast majority of us are literally muscling through our days, when a few simple changes to our routine and our diets can help us thrive through our days and operate at our highest levels of performance!

I say all of this to enlighten you on things that I have learned the hard way (just like you), and the small changes I have adopted to help combat the chaos that consumes our lives. Believe it or not, the chaos is not going away, but a few simple changes in what you put in your body WILL help you to manage that chaos so much better! My Meal Prep Egg Scrambles were one of the small changes I made in my day that contributed to a world of difference. Having these already prepared and waiting to grab for breakfast or lunch has ensured that I won’t grab some processed food from my pantry that reduces me to the slow-motion version of myself throughout my day.
So let’s talk about what you will need to make these. Keep in mind, that your ingredients will largely be affected by your preferences, but I will be including the exact ingredients and methods I use for prepping mine. The ingredients I gather for my prepping are Jimmy Dean Regular Premium Pork Sausage, Hickory Smoked Original Bacon, Hatfield Boneless Hardwood Smoked Ham Steaks, a large onion, red bell peppers, green bell peppers, shredded cheddar cheese, and baby spinach.

Once you’ve decided on the ingredients you want to use for your Meal Prep Egg Scrambles, you will want to prepare each ingredient to get it ready to package up. This is going to take up the bulk of the time required to make these egg scrambles.
Sausage: To prepare your sausage, preheat a cast iron skillet over medium-high heat. Add your sausage to the skillet and crumble it while you brown it up. Remove it to a separate bowl.
Bacon: For your bacon, in the same skillet used to brown up your sausage, crisp up your bacon to your liking. Transfer it to separate plate lined with paper towel to soak up the excess grease, crumble it into small pieces, and remove it to a separate bowl.
Ham: To prepare your ham, dice both ham steaks into 1/8-inch cubes and remove to a separate bowl.
Onion: Dice your onion finely and remove it to a separate bowl.
Red Bell Pepper: Dice your red bell pepper finely and remove it to a separate bowl.
Green Bell Pepper: Dice your green bell pepper finely and remove it to a separate bowl.
Spinach: If you are refrigerating your egg scrambles, add whole pieces of spinach to your Ziploc bag or airtight container, and cut or tear it into small pieces just prior to adding your egg(s) and microwaving. Otherwise, your spinach will wilt. If you are freezing your egg scrambles, rough chop your spinach and add in with ingredients right away, as your freezer will stop the wilting process.

Once your ingredients are fully prepped, the fun part begins…assembling each of your egg scrambles. You can use Ziploc bags or airtight containers (2-cup capacity or more) to store your mixed ingredients. Just make sure if you are freezing them that you choose containers that are freezer safe. Then, simply prepare your individualized egg scrambles by placing your desired amount of ingredients in whatever container you are using and pop them in your refrigerator for up to four days or your freezer for up to four months.

Out of the refrigerator: When you are ready to make your egg scramble, empty your prepped ingredients into a microwave safe bowl (2-cup capacity or more). Crack one or two eggs into the ingredients, salt and pepper to taste, and scramble your eggs throughout to mix completely. Microwave on high for 30 seconds. Mix and fluff your egg mixture with a fork and heat it on high for 1-minute intervals until your eggs are completely cooked through.



Out of the freezer: When you are ready to make your egg scramble, empty your prepped ingredients into a microwave safe bowl (2-cup capacity or more). Crack one or two eggs into the ingredients, salt and pepper to taste, and scramble your eggs throughout to mix completely. Microwave on high for 1 minute. Mix and fluff your egg mixture with a fork and heat it on high for 1-minute intervals until your eggs are completely cooked through.

1 large onion, diced finely
2 red bell peppers, diced finely
2 green bell peppers, diced finely

4 ounces fresh baby spinach
MEAT LOVERS SCRAMBLE
2 Tablespoons sausage
2 Tablespoons bacon
2 Tablespoons cooked ham

WESTERN OMELET SCRAMBLE
1 Tablespoon onion
1 Tablespoon red bell pepper
1 Tablespoon green bell pepper

HAM AND CHEESE SCRAMBLE
2 Tablespoons ham, diced small
¼ cup shredded cheddar cheese
2 Tablespoons spinach, optional
MEAT AND PEPPERS SCRAMBLE
